These Southwest Sweet Potato Bites have been patiently waiting to make their blog debut. They look cute piled up on a plate but these little guys are not messing around. The first taste is so surprising: there is a lot to process all at once. The second taste is when you can begin to tease apart the flavors and textures.  The third taste – oops! time to grab another. The third bite is when you will probably decide that this is just the beginning of a long and happy relationship.

I hate to think that readers who happen to be outside of the area or heaven forbid have other plans might miss out on this. I do hope you try it and let me know what you think.

Baked Wonton Appetizer

Southwestern Sweet Potato Bites
Serves 200
If time allows, make the filling the night before you assemble and bake the bites. The combined flavors become richer after 12 or more hours. This recipe yields about 6 cups of filling, enough for more than 200 Southwestern Sweet Potato Bites, but you don't need to make that many! Once you have made your bites, any remaining filling can be used for enchiladas or made into meatless burgers.

Ingredients
  1. 1 1/2 - 2 pounds Sweet Potatoes (aka Red Garnet Yams) - baked or microwaved until soft
  2. 1 15oz. can of black beans or equivalent in dry beans soaked and cooked
  3. 1/2 cup of corn kernels
  4. 1/4 cup red onion - finely diced
  5. 3/4 teaspoons cumin
  6. 1 1/2 teaspoon smoked paprika (not hot)
  7. 1/2 teaspoon chili powder
  8. 3/4 - 1 teaspoon Kosher coarse salt
Recommended Additions
  1. 1/4 cup fire roasted green chilies - diced
  2. 4 oz finely grated Monterey Jack, Pepper Jack, or Cheddar cheese
  3. 200 round wonton/gyoza wrappers
Filling
  1. Cook and cool the sweet potatoes. Scoop softened sweet potato out of the skins into a medium to large mixing bowl. Mash it with a fork so there are no large pieces.
  2. To the sweet potatoes add - beans, corn, onion, cumin, smoked paprika, chili powder, and green chilies. Stir with a fork to mash and evenly combine the ingredients. Try not to mash the beans.
  3. Taste the mixture and add salt as needed to brighten the flavor. Add more of the spices if you like it a bit bolder.
  4. Refrigerate overnight if possible.
Assembly
  1. Preheat the oven to 375.
  2. Line a cookie sheet with parchment or a non-stick baking mat.
  3. Lay out about 5 wonton wrappers at a time, cover the remaining wrappers to keep them from drying out.
  4. Spoon 1 teaspoon of filling into the center of the wrapper. Too much filling will make it difficult to seal the edges. Sprinkle a few pieces of shredded cheese over the mound. Seriously like 5 shreds.
  5. Use a pastry brush or your finger to lightly wet the perimeter of the wrapper. Fold the wrapper in half to make a crescent shape and pinch the newly joined edges together. Bend the ends back around and pinch them together. You may need a little dab of water to help them hold.
  6. Make just a few or as many as fit comfortably on the pan.
  7. Once assembled bake them in the preheated oven for 12 minutes - flip after 7 minutes to brown both sides.
Notes
  1. Serve hot with a little something acidic and zesty on the side like sour cream and salsa or guacamole.

  1. The burrito idea is great for me. Pretty sure I cannot get wonton wrappers here. I may go quesadilla style for appetizers.

    • It would have a slightly different texture but it could work. In your kitchen you get to make the rules! If you try it let me know how it turns out. :)

  2. The nutrition information you have listed above doesn’t seem to be consistent unless wonton wrappers are *very* high protein. Am I missing something?

    • Thank you for your eagle eye and careful readership. The numbers are off. I will adjust the post to reflect the correct (but always approximate) numbers.

Tavia and I are both well although not currently pushing real hard on the MK thing. How old is your little one? Congratulations on the weight loss.   4. How fun! I’m sorry I can’t make it this time but hopefully there will be more chances! These sound delish–I used to make the black bean and sweet potato burritos from the Low-fat Moosewood all the time, have you tried those? It’s probably time to resurrect that classic!

    • I haven’t tried the Moosewood recipe but I will look for it.

      I would love to have you at a class! There will be more (knock on wood) so you haven’t completely missed out. :)
